CHICK-FIL-A CARROT AND RAISIN SALAD

Ingredients:

  • 4 cups finely shredded carrots
  • 1 20 oz. can crushed pineapple, undrained
  • 1 cup raisins
  • ¾ cups mayonnaise
  • 1 Tablespoon sugar
  • ½ Tablespoon lemon juice

Directions:

Chill ingredients for at least 30 minutes. Combine gently in a large bowl, using a large spatula, or

Wooden spoon. May be refrigerated up to 72 hours.

Karen’s Notes:

This was my favorite menu item at Chick-Fil-A. It is no longer served, so I have to make it at home.  I would use honey instead of granulated sugar and maybe substitute dried cranberries for the raisins for a different twist.  It also would work well to use lite mayonnaise or yogurt instead of the full-fat mayo.  This is worth tasting whether you make changes or not.  It is so good!
