Bananas are one of the world’s most popular fruits. They are not only versatile and delicious, but affordable and healthy as well.  Although they are the perfect ingredient for breakfast, showing up in smoothies and topping cereals, bananas are also popular in desserts.  Their natural caramel flavor and rich texture make them a perfect ingredient in pudding.  Ok, so banana pudding sounds a little boring, but it can be a welcome treat that is also healthy.  It can often be whipped up from scratch in just a few minutes with ingredients you already have in your pantry.  Here are a few recipes that breathe new life into this old favorite and kick up the nutrition factor as well.  You will never have leftover bananas around the house with these desserts that are sure to please.

Spiced Rice Banana Pudding

A comfort food with a healthy twist, this simple dessert packs a powerful punch. Warm spices add both flavor and antioxidants while the bananas and coconut provide potassium and fiber.  Use up leftover rice and bananas in one shot.

Ingredients:

* 1 cup brown basmati rice
* 2 cups water
* 3 cups plus 1 Tablespoon milk, divided
* 1/3 cup light brown sugar
* 1/2 teaspoon cinnamon
* 1/2 teaspoon cardamom
* 1/2 teaspoon nutmeg
* 1/2 cup shredded coconut
* 1 Tablespoon cornstarch
* 2 ripe bananas
* 1 teaspoon vanilla extract

Directions:

  1. Combine rice and water in a medium saucepan. Bring to a boil. Stir once, and reduce heat to low. Cook covered for 40 minutes, or until liquid is absorbed.
  2. Stir in 3 cups milk, brown sugar, cinnamon, cardamom and nutmeg, and bring liquid to a quick simmer. Cook for 10 minutes, stirring occasionally.
  3. Blend cornstarch and remaining 1 Tablespoon milk in a small bowl until smooth; add to the pudding. Continue cooking, stirring often, until the mixture coats the back of a spoon, about 5 minutes. Remove from heat.
  4. Mash bananas in a small bowl. Stir the mashed bananas, coconut and vanilla into the pudding. Place in a large bowl, and cover with plastic wrap touching the surface of the pudding to prevent a skin from forming on the top. Chill well. Serve with additional sliced bananas, if desired.

Banana Gingersnap Pudding

This quick and easy recipe is the perfect end to a rustic meal. The sweetness of the bananas combined with the satisfying crunch of the gingersnaps make this a go-to dessert for when you need a little comfort food after a long day.

Ingredients:

* 1/3 cup all-purpose flour
* 2 1/2 cups milk
* 1 (14 oz.) can sweetened condensed milk
* 2 egg yolks, lightly beaten
* 1 teaspoon vanilla extract
* 3 ripe bananas, sliced
* 24 gingersnap cookies

Directions:

  1. Place flour in a medium saucepan. Gradually stir in milk, sweetened condensed milk and egg yolks. Stir constantly and cook over medium heat for 8 to 10 minutes, until thickened. Remove from heat; stir in vanilla.
  2. Layer banana slices, pudding and gingersnaps in a large bowl or square baking dish. Repeat to make 3 layers. Serve warm, or chill before serving as you prefer.

Banana Bread Pudding

This decadent twist on a classic dessert will be a winner with your family. The warm crusty outside yields to a custard center, topped with a deliciously smooth sauce. This is the perfect use for stale bread and brown bananas.

Ingredients:

* 4 cups of day-old French bread, cut in 1-inch cubes
* 1/4 cup butter, melted
* 3 eggs
* 2 cups milk
* 1/2 cup sugar
* 2 teaspoons vanilla extract
* 1/2 teaspoon ground cinnamon
* 1/2 teaspoon ground nutmeg
* 2 ripe bananas, cut in 1/4-inch pieces

Sauce:

* 3 Tablespoons butter
* 2 Tablespoons sugar
* 1 Tablespoon cornstarch
* 3/4 cup milk
* 1/4 cup honey
* 1 teaspoon vanilla extract

Directions:

  1. Heat oven to 375F (190C) degrees. Grease a 9×9 square pan. Place the bread cubes in pan; pour butter over and toss to coat. In a medium bowl, lightly beat eggs, and then add milk, sugar, vanilla, cinnamon and nutmeg. Stir in bananas.
  2. Pour mixture over bread cubes, and stir to coat.
  3. Place a baking sheet with a 2-inch rim onto center oven rack. Place pudding in center of pan, and fill outer pan with hot water. Bake, uncovered, 40 minutes, or until a knife inserted near the center comes out clean.
  4. Prepare the sauce while pudding is in the oven. Melt butter in a small saucepan, and then add sugar and cornstarch. Stir in milk and honey. Cook over medium heat, stirring occasionally, until the mixture comes to a full boil. Boil for 1 minute. Remove from the heat; stir in the vanilla. Spoon sauce over warm pudding, and serve immediately.

These recipe ideas are so delicious and good for you, after one bite you’ll want to remake them once a week.
